Kovalsky’s Broccoli Kugel

We know you have been waiting for our next post so here it is:

This kugel is delicious! Our friend Jordan Kovalsky (featured on left) introduced us to the recipe as sophomores and we’ve been hooked ever since! It’s super easy to make and is always a big hit with all of our friends (especially those who like savory treats like Amanda). Its perfect for any large group gathering (Shabbat or any weeknight meal). It can be made parve or dairy!

8 oz of cooked egg noodles

3 eggs

1 stick of margarine

1 cup of coffee rich ( or soy milk)

1 frozen packed of broccoli, chopped (steam in microwave)

2 packages of onion soup mix

1.   Preheat oven to 350 degrees

2.   Spray non-stick spray on a pyrex dish (lasagna dish)

3.   Combine all ingredients

4.   Pour in pan and bake for one hour. Remove when top of kugel looks golden brown.
