Our version of “authentic” Italian Meatballs

These meatballs are adapted from our friend Laura, she is a real Italian, and taught us her Grandmother’s recipe over a year ago! Since then we eat them regularly! Everyone loves these delicious meatballs and they are super easy to make at school or at home!

We did make a slight alteration to the recipe  It traditionally is made with adding cheese to the mix, and of course we had to omit this because it was not KOSHER.


  1. 1 lb. ground turkey meat (or beef)
  2. 4 eggs
  3. 1 box of Panko breadcrumbs
  4. Handful of chopped fresh parsley
  5. Handful of chopped fresh garlic
  6. Olive Oil


  1. In a large bowl combine turkey meat, eggs, parsley, garlic, and generous amount of breadcrumbs.
  2. Use hands to mix the ingredients and continue to add breadcrumbs until the mixture is well combined, feels fluffy and not overly moist.
  3. On a clean plate use hands to make little balls, about the size of a small scoop of ice cream.
  4. Heat Olive Oil in a large pan on the stove and wait until the oil is boiling.
  5. Place in each meatball in the pan and cook through, turning as it cooks, and browning the outside.
  6. Once the meatball is cooked put it on a plate with a paper towel to absorb the excess oil before putting into a pot of sauce or eating.
